Here's recipe number 3 using rhubarb. This is a very quick and easy dessert.  It's delicious when it's served just a little bit warm.
2 eggs
2/3 cup flour
1 cup sugar
1 tsp. baking powder
salt
vanilla
Beat the above ingredients and then add 2 cups diced rhubarb.  Put in ungreased pie tin.  Bake at 350 degrees for 30-35 minutes or until light brown.  Serve with cool whip.
